It started, as the best stories do, humbly. A modest cafe tucked into the lanes of Rishikesh, serving plates of chole kulche to pilgrims, backpackers and locals alike.

There was no grand plan — only a stubborn belief that a single plate of food, made with honesty, could stop someone in their tracks.

That belief pulled us to the source. We travelled deep into Punjab — from the bustle of Amritsar's old city to quiet village kitchens and the memory of royal households.

We learned the patience of overnight dals, the theatre of the tandoor, and the exact blister a kulcha must carry. We returned with more than recipes; we returned with a philosophy.

We reopened — no longer a cafe, but a fine-dining house. Brass, timber and candlelight framed the food we had travelled so far to perfect.
