House of Amritsar began in 2016 as a small cafe in the lanes of Rishikesh, built around one dish done properly — chole kulche, griddled to order for pilgrims, backpackers and locals.
To do it justice, we went to the source. Travelling through Punjab — Amritsar's old city, quiet village kitchens, the memory of royal households — we learned the patience behind the food: overnight dals, the timing of a live tandoor, the exact blister a kulcha must carry. We came back and rebuilt our own kitchen around that research.
It still decides our menu. No dish reaches the table until we understand how it tastes at its source and our chefs have mastered it. That standard now carries the taste of Amritsar through Rishikesh — and next, to Dehradun.
